Biology Assignment what should I choose?

Hello,
I have been given a variety of options to pursue for my assignment.
However, I am having trouble picking just "one" because there are so many I would love to choose.
I have listed the topics below and would love for someone to give me an inside on what I should do.

Rabies would be a great choice I think.

You could talk about Pasteur and Emile Roux. You could talk about the vaccine and RIG. There have been a number of cases recently in the UK from foreign travel.

You could talk about the latency how it can takes years between exposure and symptoms. You could talk about the pathology, how it slowly crawls up the neurons and is fatal once symptoms start.

You could also talk about the symptoms which are pretty grim. Such as hydrophobia and acrophobia.

Theres also the Milwakee protocol you could talk about which is rumoured to have been the only case of symptomatic rabies to be treated. Although some think it may have been a bat lyssa virus instead.
